Я не думаю, что вы можете изменить заголовки HTTP NSURLRequest. Я думаю, вы пытаетесь изменить объект NSURLRequest, который вы не инициализировали?

Вы можете создать mutableCopy вашего запроса, а затем задать поля заголовка следующим способом:

 -(void)setValue:(NSString *)value forHTTPHeaderField:(NSString *)field.

После этого вы можете вернуть copy измененный запрос на свою переменную NSURLRequest.
