Обновление: я немного продвинулся, передав StringToAssessmentConverter в качестве аргумента getConversionService, но теперь я получаю ошибку "No default constructor found" для класса StringToAssessmentConverter. Я не уверен, почему Spring не видит конструктор @Autowired.

Ответ: вам нужно только обменивать конвертер на @Component:

Это пример моего конвертера

import org.springframework.core.convert.converter.Converter;
@Component
public class DateUtilToDateSQLConverter implements Converter<java.util.Date, Date> {

    @Override
    public Date convert(java.util.Date source) {
        return new Date(source.getTime());
    }
}

Затем, когда Spring необходимо выполнить преобразование, вызывается преобразователь.
